- In a large bowl, combine chicken, 2 tbsp oil, and all the seasonings. Mix to coat the chicken. Cover and refrigerate.
- In a large skillet, over medium heat, saute the peppers and onions in the remaining oil until tender. Remove from heat and keep warm.
- Drain the excess marinade from the chicken. Over medium heat, In the same skillet, cook chicken until no longer pink (~5-10 min). Return pepper mixture to the skillet and heat through.
- Top tortillas with the chicken mixture and any additional toppings. Fold in half and enjoy!
