Easy Fajitas

  1. In a large bowl, combine chicken, 2 tbsp oil, and all the seasonings. Mix to coat the chicken. Cover and refrigerate.
  2. In a large skillet, over medium heat, saute the peppers and onions in the remaining oil until tender. Remove from heat and keep warm.
  3. Drain the excess marinade from the chicken. Over medium heat, In the same skillet, cook chicken until no longer pink (~5-10 min). Return pepper mixture to the skillet and heat through.
  4. Top tortillas with the chicken mixture and any additional toppings. Fold in half and enjoy!
