- Rinse the lentils. Drain and set aside
- In a medium pot, heat the oil over medium heat.
- Add the onions and cook, stir to avoid burning
- Add the garlic and ginger and cook until fragrant
- Add the crushed tomatoes, sugar, curry powder, and cayenne pepper. Stir to combine
- Add the lentils and water, stir. Cover the pot and bring to boil
- Reduce the heat to low and simmer for 20 minutes, stirring occasionally, until the lentils are tender
- Pour in the coconut milk and add salt to taste, stir. Turn off the heat
- Garnish with fresh coriander and serve with rice

Be sure to add salt only at the very end since salt can prevent the lentils from reaching tenderness
