One-Pot Bolognese Sauce

It uses pantry staples that you probably already have around the kitchen
You can hide lots of vegetables in it (for kids or picky adult eaters)
You can make a large batch of it and freeze it for later (I like to divide them into pre-portioned freezer bags for easy reheating)
It’s versatile. This sauce can be served on top of pasta as a dish of it’s own or act as a base for other pasta dishes like lasagne
Chunky Bolognese Sauce

- In a large pot heat the olive oil over medium heat. Add the onion and garlic and saute until the onions become soft
- Add the carrots and saute for about 5 minutes
- Raise heat to high and add the ground beef. Saute, stirring to breaking up any large clumps and cook until meat isn't pink anymore
- Add the tomatoes and parsley and cook over medium low heat for about 30 min until the sauce thickens
- Serve over cooked pasta of your choice with freshly chopped parsley on top
Notes:
I use diced tomatoes because I like chunky sauces, but feel free to use crushed tomotoes of you like a smoother texture
Although I only use carrot, many recipes call for celery or mushrooms too. Feel free to substitute 1 carrot for another veggie
"Heat & Eat" Bolognese Baggies: Divide the sauce into portioned ziploc bags and freeze them. When you're ready to eat, just remove the frozen chunk of sauce from the bag and heat it in a microwave-safe dish!
